Serves 8 Per Serving

2 envelopes unflavored gelatine 2 fl oz water
15 fl oz double cream
1 tablespoon vanilla extract7 1/2 oz canned pumpkin
1 tablespoon dark brown sugar
8 sticks Canderel
1 teaspoon cinnamon
1/2 teaspoon grated nutmeg or mace1/8 teaspoon allspice
1 tablespoon bourbon
Garnish: a dusting of maceSprinkle the gelatine over the water in a small bowl. Let stand for 2 minutes, then microwave for 40 seconds. In a small saucepan, warm 8 fl oz of the cream with the vanilla until it bubbles, then stir the pumpkin and sugar and cook for 3 minutes. Add the sweetener, the spices and the bourbon.
Stir in the gelatine.
Beat the remaining cream into soft peaks and fold into the pumpkin mixture. Scoop into a glass or a ceramic serving bowl and refrigerate covered until ready to serve, up to 6 hours.
Decorate the top of the dish with sprinkled mace.
