Serves 4

1/2 lb of large raw shrimp

2 diced tomatoes, no seeds

1/2 medium cucumber, peeled and cut in tiny dice

1 oz minced red onion

1/2 oz chopped coriander

1 avocado, diced
Jolt of hot pepper sauce

4 fl oz Clamato juice

1 lime cut into 8 slices

Coriander sprigs to garnish

Have a large pot of boiling water over the stove. 

Toss in the shrimp and cook just until they turn pink.

Drain in the colander over the sink. 

When the prawns are cool enough to handle, shell them, removing the vein. 

Put the prawns in the the bowl, cover and refrigerate until ready to serve.

In a large bowl mix everything else except the lime and coriander sprigs add the prawns and divide the cocktail among 4 glasses or bowls. 

Hang 2 lime slices over the edge and decorate with coriander sprigs. Serve immediately.
