Same as devilled eggs

1 dozen extra-large eggs, at room temperature

6 tablespoon mayonnaise

1/2 teaspoon dry mustard

Salt and pepper to taste

Paprika, optional

Put the eggs in a large saucepan with cold water to cover. 

Slowly bring the water to a boil . 

The minute the water boils, remove the pan  from the heat. 

Cover and let the egg stand for 15 minutes- set the timer.

When the eggs are done, put the pan in the sink and run cold water into it. 

When the eggs are cool enough to handle, tap them against the side of the pan all over to loosen the shell. 

Let them sit in the cold water until you' re ready to peel them.

Remove the eggs and cut the shell into half crosswise. 

Remove the yolks to a bowl, mash them with a fork

Chopped 2 slices of smoked salmon and stir into egg yolk mixture. 

Add a tablespoon of drained capers. Then add the mayonnaise, mustard salt and pepper. 

Cut the very ends of the egg- white cases so they will stand up easily, and stuff them with the egg yolk mixture. 

Sprinkle paprika over the top if you like.     

Top each egg half with a frond of fresh dill.
