Cooking Tomato Soup
Serves 6 Per Serving

3 tablespoons clarified butter 3 shallots, chopped
3 lb ripe tomato or 2 cans diced tomatoes
1/4 teaspoon dried thyme
15 fl oz chicken stock
1/4 teaspoon baking soda4 fl oz double cream
Pinch of ground red pepper ( cayenne)
Salt and black ground pepper
1 tablespoon grated horseradish, optional
1/2 lb picked crabmeat, optional
In a large saucepan, melt the butter and add the shallots. Cook for 10 minutes or until soft. Cut the fresh tomatoes in cubes and discard the seeds. Add the tomatoes in the saucepan along with the thyme and chicken stock. Bring to a simmer and cover. Cook slowly for 20 minutes.
Turn off the heat and puree the soup in the blender or right in the saucepan with hand held blender. Add the baking soda, cream and cayenne. Heat the soup for serving but don't let it boil.
Stir in the horseradish just before you ladle it into a warm soup bowls.
Scatter the crab on top or just complete the tomato soup with grinding of black pepper and a feathering of cream on top.
