Serves 8

1/2 lb mild chevre

6 oz feta cheese, drained

1/2 teaspoon ground cumin

1/4 teaspoon ground red pepper (cayenne)

1/4 cup finely chopped, mint leaves or pecans

2 fl oz olive oil

In a large  bowl or in a food processor, combine the cheeses with the cumin and cayenne. Mix well.

Form the mixture in to small balls - about 24 is the right number. 

Put the mint or nuts on a plate and roll the balls in it to cover.

Chill on the plate at least an hour and up to 4 hours.

Remove from the refrigerator and let stand for half an hour. 

Arrange the balls into little tower and pour the olive oil over. 

Serve with toothpicks.
