Cooking Cabbage Soup
Serves 6 Per Serving

1 3/4 pints chicken stock ( canned low-sodium is fine) 1 3/4 pints water
1 lb ( 1/2 medium size head) napa or savoy cabbage shredded
6 springs onion, including the firm green, sliced thinly
1 garlic clove, minced
2 tablespoons soy sauce2 tablespoons dry sherry
2 teaspoons grated fresh ginger
1/2 lb firm tofu, cut into thin silvers
1 tablespoon corn flour, dissolved in 2 tablespoons water
2 large eggs, beaten
Salt and pepper to taste
1/3 cup chopped coriander, for garnish
Combine the stock water, cabbage, spring onions, garlic, soy, sherry, ginger and tofu in a large soup pot. Bring to a boil. Reduce the heat and simmer for 10 minutes, or until the cabbage is cooked through but still has some texture. Stir in the dissolved corn flour and stir the soup until it's slightly thickened.
Beat the eggs in a small bowl and slowly stir them into the simmering soup with a fork or a chopstick so they they form little strands. Add the pepper, taste the soup, and add salt if necessary.
Serve immediately in warm bowls and garnish with the coriander.
