Serves 10 Per Serving

4 large eggs 12 fl oz single cream
1 lb ripe Brie including the rind, at room temperature
1/8 teaspoon salt
Preheat the oven to 350 F/ 180 C/ Gas Mark 4. Separate the eggs. In a mixing bowl, beat the egg yolks with the cream.
Chop the cheese in a bowl of a food processor until you have a paste. Add the creamy yolks and combine thoroughly. Pour the mixture into a mixing bowl and stir in the salt and pepper to taste.
Beat the egg white into salt until stiff and stir 1/3 of them into the cheese mixture. Fold the remainder into the rubber spatula.
Pour the custard into a 8-inch quiche pan and grind a little more pepper on top.
Bake for 30 minutes or until set.
Serve at room temperature.
