1 oz sliced prosciutto chopped

1 small carrot shredded

1 green onion sliced

4 beef tenderloin steaks, cut 1 inch thick

4 thin slices prosciutto

Combine chopped prosciutto, carrot and green onion for stuffing

Cut horizontal pocket in ech steak by cutting from one side to the other side

Filled pockets with stuffing 

Cut prosciutto into 1 inch strips,  wrap around each steak and secure with wooden toothpicks

Preheat broiler and place steaks on broiler and broil for heat until desired doneness

Broil 12 to 14 minutes  for medium rare or 15 to 18 minutes for medium
