1 pound fresh shrimp in shells

1 can coconut milk

3 teaspoons red curry paste

2 tablespoon snipped fresh cilantro

16 oz  loose pack broccoli, green beans, pearl onions and red peppers

Peel and de-vein shrimp, keeping tail intact

Rinse shrimp and set aside

In a large skillet stir together coconut milk and red curry paste

Add broccoli, green beans, pearl onions and red peppers

Bring to boiling, reduce heat and simmer for 6 minutes until vegetables are crisp tender

Add in shrimp, stir and heat through

Sprinkle with cilantro and serve
