4 skinless boneless chicken breast halves Salt and black pepper
4 dried tomatoes cut into thin strips
2 ounce crumpled feta cheese
4 teaspoons snipped fresh oregano or 1/2 teaspoons dried oregano crushed
2 tablespoons olive oil
Place each chicken breast halves between 2 pieces of plastic wrap
Pound lightly with the flat side of a meat mallet to 1/4 inch thickness
Remove plastic wrap and sprinkle with salt and black pepper
On each chicken breast, layer some of the tomato strips, cheese and oregano
Fold narrow ends over filling, rollup each chicken breast halves and secure with wooden toothpicks
In a medium non-stick skillet cook chicken in hot olive oil over low medium heat for about 25 minutes, turning over to brown evenly
